Baked Salmon Avocado

Ingredients:

  • 15 g fresh basil

  • 3 cloves garlic

  • 1 teaspoon capers

  • 1 lemon

  • 2 tablespoons coconut oil

  • 1 ripe avocado

  • 905 g salmon fillets

How to prepare

  1. Preheat oven to 180C.

  2. Chop the basil. Crush the garlic. Drain and finely chop the capers. Zest the lemon.

  3. Grease a baking sheet with coconut oil (you may optionally line with tin foil and then grease).

  4. Peel, pit and mash the avocado until very creamy.

  5. Stir in the chopped capers, garlic, basil and lemon zest.

  6. Lay salmon fillets on prepared baking sheet. Spread avocado topping over the top of the salmon with a knife or the back of a spoon. Coat 1⁄4 inch thick for thinner fillets and up to 1⁄2 inch thick for thicker salmon fillets.

  7. Bake for 10 minutes (up to 15 minutes for thicker fillets). Turn the oven up to grill.

  8. Grill for 3-4 minutes until the avocado topping starts to brown. Make sure salmon is cooked through

I enjoy this meal with some steamed Bok Choy or a mix of asian greens.
