Café style steamed eggs

Ingredients:

  • 2 eggs

  • 300 g spinach

  • 1 heaped tablespoon sauerkraut

  • 1/2 avocado

  • 1 Tbsp Olive Oil

  • 1/2 teaspoon garlic powder

  • Some microgreens

  • 2 slices bread of choice (I use paleo bread)

How to prepare

  1. Put the bread (especially if frozen) in toaster to toast

  2. Meanwhile, place oil in frypan and add spinach. Sprinkle spinach with garlic powder an stir while cooking

  3. In the same pan or different pan, heat oilive oil and crack eggs to start to fry. Place a lid on top of the frying pan to help steam the top of the eggs. Make sure you keep an eye on the eggs and when the top turns transulcent white, eggs are ready. You don’t want hard eggs but ones that are soft on the inside with all the whites cooked on the outside.

  4. Once toast is ready, spread the avocado as you would butter.

  5. Top with spinach, your egg, salt & pepper as you wish and microgreens

  6. Sit down with your cup of bone broth, coffee or tea and enjoy!

You can expand this recipe to include mushrooms with your spinach or a slice of rockmelon as I have in the above shot. Be creative!
