One pan chicken and sauerkraut

Ingredients:

  • 800 g chicken thighs

  • 1 onion, finely diced

  • 4 cloves garlic, finely diced

  • 2 tablespoon extra virgin olive oil

  • 500 ml chicken broth

  • 430 g of sauerkraut

  • 12 kale leaves, chopped

  • 2 large sweet potato, peeled and chopped into chunks

  • 2 handful spinach

  • 2 handful flat-leaf parsley, roughly chopped

  • Himalayan pink salt

How to prepare

  1. In a large lidded frypan, add olive oil and brown chicken on both sides over a medium heat. Approx 5mins each side.

  2. Take chicken out and put on a plate. Leave juices in the pan.

  3. Turn heat to low. Add onion and garlic and cook for 5mins.

  4. Add bone broth, sauerkraut, kale and sweet potato and simmer for 5mins

  5. Add chicken back into pan, place lid on and simmer for a further 20mins

  6. Add in spinach and parsley, stir, simmer for another two minutes.

  7. Serve on it’s own or with rice/cauliflower rice.
