Okonomiyaki in a tray

Why?

Ingredients:

  • 325 g finely shredded cabbages, or brussel sprouts

  • 265 g sweet potatoes, or carrot grated

  • 1/2 bunch green shallot, thinly sliced

  • 6 eggs, whisked

  • 2 tablespoons Tamari

  • 120 g buckwheat flour

  • 230 g mayonnaise

  • 2 tablespoons seasame, seeds

  • 1 strip nori sheet, cut into thin

How to prepare

  1. Preheat the over to 180 and grease large baking dish.

  2. Place cabbage, grated vegetables and shallots in a large bowl and toss.

  3. Whisk eggs then add Tamari and flour. Form a batter.

  4. Stir batter into vegetables.

  5. Pour the mixture into the prepared baking dish.

  6. Bake for 30mins or until the top starts to brown and eggs are cooked through.

  7. Remove from oven.

  8. If using mayonnaise, place the mayo in a zip lock bag. Make a small cut at the bottom of the bag to create a pipping bag. Squeeze the bag to create even parallel lines over the bake.

  9. Cut up nori sheet into thin slices and place diagonally onto the bake.

  10. Sprinkle over sesame seeds and serve!
