Watercress Soup

Why?

  • Vegetarian

  • Can be gluten and dairy free if required

  • Watercress is highly nutritious with detoxifying properties, anti-inflammatory, contains anti-oxidants, calcium and iron

  • Good for bone health

  • Good for digestion

Ingredients:

  • 1 onion

  • 4 spring onions

  • 450 g watercress

  • 100 g butter or dairy free nut butter

  • 40 g plain or gluten free flour

  • 750 ml vegetable stock

  • 300 ml water

  • Coconut cream or cream to serve

How to prepare

  1. 1.Roughly chop the onion, spring onions and watercress.

  2. Heat the butter in a large pan and add the onion, spring onions and watercress

  3. Stir over low heat for 3 minutes or until the vegetables soften

  4. Add flour and stir until combined

  5. Gradually add the stock and water to the pan, stirring until smoothStir until mixture boils and thickens

  6. Simmer covered over low heat for 10mins or until the watercress is tender

  7. Cool slightly and serve with a drizzle of coconut cream or real cream

Goes well with: Baguette, sourdough or gluten free bread with butter or nut butter
