Salmon stuffed avocados

Why?

Ingredients:

  • 4 green onions

  • 1 lemons

  • 2 avocados

  • 340g canned salmon (can also use canned tuna)

  • 1 g fresh dill

  • 4 g fresh parsley

  • 115g mayonnaise

  • sea salt, to taste

  • ground black pepper, to taste

How to prepare

  1. Mince green onion. Juice lemon. Cut the avocados in half lengthwise and remove the pit.

  2. Scoop a small amount of the flesh into a mixing bowl and add in the remaining ingredients. Stir until just combined (try not to over-mix).

  3. Fill the avocado shells with the mixture and enjoy!

    Goes well with: MIxed green leaf salad.
