Ingredients:
680 g prawns
110 g coconut oil
2 tablespoons minced garlic
80 ml white wine
2 teaspoons sea salt
1/4 teaspoon ground black pepper
65 g coconut flakes (or shredded coconut)
1 tablespoon dried parsley (can use fresh too, finely chopped)
2 teaspoons lemon juice
How to prepare
Preheat oven to 220C. De-vein and peel the prawns. Melt the oil.
In a bowl, combine the prawn, garlic, and white wine.
Place prawn mixture in a shallow baking dish in a single layer. Season with salt and pepper.
Using the same bowl, mix melted oil, coconut flakes, and parsley until well combined.
Using your fingers, sprinkle the mixture evenly over the shrimp.
Bake about 15 minutes or until the prawn are pink and opaque and the topping is nicely browned.
Serve with a drizzle of lemon juice.
Goes well with: Steamed green beans, rice, cauliflower rice, steamed bok choy.
