Ingredients:
1/4 red onion
2 small cucumbers
4 dates
1 tablespoon ground turmeric
1 tablespoon garlic powder
1/2 teaspoon sea salt
60 ml extra virgin olive oil
455 g shrimp
225 g baby salad greens
70 g pine nuts, optional
1 tablespoon balsamic vinegar to taste
How to prepare
Chop onion. Cut cucumbers into cubes. Pit and chop dates.
Mix the spices in a large bowl.
Add the shrimp and coat until completely covered.
Heat a fry pan over medium heat. Once hot, add 1/2 of the oil and allow it to come to temperature. Add shrimp, cook on one side for 3 minutes, then flip and cook on the other side for 5 minutes, until crispy and cooked through.
Combine greens, onion, cucumber, and dates in a bowl. Top with shrimp and pine nuts.
Dress with balsamic oil and remaining olive oil, to taste. Enjoy!
