Aegean Salad with blackened prawns

Ingredients:

  • 1/4 red onion

  • 2 small cucumbers

  • 4 dates

  • 1 tablespoon ground turmeric

  • 1 tablespoon garlic powder

  • 1/2 teaspoon sea salt

  • 60 ml extra virgin olive oil

  • 455 g shrimp

  • 225 g baby salad greens

  • 70 g pine nuts, optional

  • 1 tablespoon balsamic vinegar to taste

How to prepare

  1. Chop onion. Cut cucumbers into cubes. Pit and chop dates.

  2. Mix the spices in a large bowl.

  3. Add the shrimp and coat until completely covered.

  4. Heat a fry pan over medium heat. Once hot, add 1/2 of the oil and allow it to come to temperature. Add shrimp, cook on one side for 3 minutes, then flip and cook on the other side for 5 minutes, until crispy and cooked through.

  5. Combine greens, onion, cucumber, and dates in a bowl. Top with shrimp and pine nuts.

  6. Dress with balsamic oil and remaining olive oil, to taste. Enjoy!
