Mustard Crusted Salmon

Ingredients:

  • 1 lemon

  • 60 g Dijon mustard

  • 1 teaspoon ground mustard

  • 455 g salmon fillets

  • 4 tablespoons almond flour

  • 3 tablespoons extra virgin olive oil

  • sea salt and ground pepper, to taste

How to prepare

  1. Preheat oven to 190C. Quarter lemon and set aside.

  2. Combine mustards in a small bowl, and lightly coat the non-skin side of the salmon fillets with the mustard mixture. Then lightly sprinkle evenly with almond flour, pressing gently to form a very thin crust. Discard any extra mustard mixture and almond flour.

  3. Coat the bottom of the roasting pan with oil and then add the salmon fillets.

  4. Bake for 15 minutes or until the fish is just cooked through (internal temperature should be 62C), and the topping is beginning to brown.

  5. Add salt and pepper to taste. Serve with a squeeze of lemon juice to taste.
