Delightful Salad Bites

Why?
Easy to prepare and have at the ready
Gluten free
Dairy free
Great source of fibre, vitamins and minerals
Nice way to use left over chicken or other protein
Ingredients:
12 butter salad leaves or other lettuce that you can make a small bowl with
1 handful of chicken breast or other protein of choice
You can marinate the chicken or protein how you like (asian flavours like ginger, garlic, tamari) or Mediterranean (garlic, lemon, olive oil)
Various thinly sliced vegetables on hand and in season. For example:
1 carrot thinly
1 cucumber
1 red pepper
1 radish
1 tomato
2 blanched asparagus
1/4 avocado
2 Tablespoons aioli
1 lemon or lime quartered
2 Tablespoons crispy shallots or chopped nuts of choice
How to prepare
Once you prepare all the vegetables, you can either lay these out on a central platter for all to pick from and to make their own salad delights with or
Prepare each salad delight by:
drizzling a bit of aioli on the lettuce
Add the protein and vegetables
Squeeze a spot of lemon or lime juice
Top with sprinkle of crispy shallots or chopped nuts
