Coconut Chia Pudding

  • Keeps you full for longer (mix of fat & protein)

Ingredients:

  • 70 g chia seeds

  • 250 ml coconut water

  • 250 ml full fat coconut milk

  • 2 eggs

  • 1 tablespoon coconut oil

  • 1 teaspoon vanilla bean

  • 1 teaspoon cinnamon

  • Fresh or frozen berries or coconut shavings to serve

How to prepare

  1. Combine chia seeds and coconut water in a large bowl

  2. Pour the coconut milk into a saucepan and bring to a simmer over medium heat

  3. Add the eggs, coconut oil, vanilla, cinnamon and salt. Whisk for 4-5mins or until slightly thickened

  4. Add the egg and coconut milk mix to the bowl with chia seeds and stir well

  5. Pour into ramekin dishes, let cool, cover and place in fridge or in freezer

  6. To serve, ensure pudding is warm, either heat up 1-2 Tablespoons of berries and place on top or simply place frozen berries on top of the pudding. Add a few coconut shavings or other toppings you may like and enjoy!
