Cauliflower Rice

Why?

  • Packed with fibre so great for the microbiome / gut

  • Is anti-inflammatory

  • Full of antioxidants

  • A great replacement for rice if you are cutting grains out or want a lighter meal

Ingredients:

  • 1 onion

  • 1 head cauliflower

  • 2 tablespoons extra virgin olive oil, or fat of choice

  • 2 teaspoons minced garlic

  • sea salt, to taste

  • ground black pepper, to taste

How to prepare

  1. Peel and chop onion. Break cauliflower into florets, then use a food processor to pulse the cauliflower florets into a rice-like texture.

  2. Heat oil in a skillet over medium heat.

  3. Sauté the onion and garlic for 3–4 minutes, or until the onion is translucent. If I’m too busy I simply add garlic powder and don’t even add onion.

  4. Add in the cauliflower rice and sauté for an additional 4–5 minutes.

  5. Season with salt and pepper.

    Tip: You can portion the rice into little bags and freeze them. That way you can make another meal even easier!
